Black Bean Hummus
Inspired by southern Mexico: black beans, roasted eggplant and sweet red pepper. Made with black beans instead of chickpeas, it's dense and savory, a little smoky from the eggplant and a little sweet from the pepper, with Aleppo chile on top. Try it in tacos, on a tostada or with tortilla chips.
